most stuff in Telluride should be open in June... especially later in June (Bluegrass Festival starts the 17th, so that's a good indicator)... as for the better food: The Chop House (Sheridan Hotel) and La Marmotte are the two that I'd recommend... Other good options: Allred's (top of the gondola), 221 South Oak, Rustico, and Honga's Lotus Petal... there are some new chefs coming into town this summer, so the quality of the restaurant at the Peaks in the Mountain Village (for example) is yet-to-be-determined... lots of food/wine/spirits stuff going on at the end of the month for the Telluride Wine Festival, too, in case you're in town that week...

re: mattlanning
I like Cosmopolitan in the Hotel Columbia and 221 South Oak around the corner, both in town. Up in Mountain Village, the restaurant in the Inn at Lost Creek is usually good -- how good depends on the chef at the time. The Cappella Hotel's fine-dining scene seemed promising last time I was in T-ride, which was while the hotel was still under construction.
