Does someone know a place where I can buy Guanciale in the Cleveland area? I'd like to try making Sugo all'amatriciana (http://en.wikipedia.org/wiki/Sugo_all...).

I looked into some online retailers but they are either way too expensive or just sell in massive quantities... like

and

http://www.salumeriabiellese.com/cure...

Thanks :-)

have you thought of making it? It might be one of the easier Charcuterie to make.http://www.babbonyc.com/in-guanciale....

DW Whitikers http://www.dwmeats.com/ at the west side market can get you fresh pork cheek.

Maybe you could contact Galluchi's to see if they have any ideas. http://www.gustgallucci.com/

I don't know for sure, but I would think that there must be someone in the West Side Market who has it, probably one of the Italian places.
Online, Zingerman's in Ann Arbor usually has it, but I assume that would fall into your "way to expensive" category.
I'm going to try making some this winter (as lyn suggests): apparently you want weather that is cold but not below freezing. So the best time to make it is in the next month or in early March, depending.
