Believe it or not, there are non-Michelin-starred restaurants in Edinburgh that are good, even though you would never believe that from reading most of the Edinburgh chowhound posts. Three good options in New Town:
-The Dogs (but definitely skip its sister restaurant Amore Dogs).
-Urban Angel

But don't do Edinburgh a disservice outside of London it has the most Michelin stars of any city in the UK, and that is a pretty good accomplishment. It is also IMO better value than London for top food which makes the restaurants quite accessable. Martin, Tom and Paul have very different styles and if I had four days in Edinburgh I would try and fit them in

Yes it is the name of a fine dining restaurant, very modern avant garde food in an grand setting, it has a very strong reputation.
Two other top places are "Restaurant Martin Wishart" and "The Kitchin" both in the Edinburgh suburb of Leith (a short cab), Tom Kitchin focuses on Scottish produce whilst Martin Wishart is more classical, both are local heroes. In the city there is "Number One" in the Balmoral Hotel which is a little more formal, and like a lot of grand hotel restaurants it doesn't seem to create a buzz. .
At the more casual end "The Grain Store" near Grassmarket is very good, and for very casual "The Dogs" is meant to be good.
