Texas Faux BBQ Pork Tenderloins and South Side Market Smoked Elgin Hot Sausages

I live in Texas and you may not be able to get Elgin Sausage...you know from Elgin Texas. Trust me, everybody in Texas uses those sausages.

Anyway I have Pork tenderloins and sausage every couple of weeks. They are a family favorite. I'm gonna call em faux BBQ so the BBQ Police don't chastise me for not smoking them. Smoking them is fine but this is so quick, I just never get around to it.

I want to share the recipe because it is so good! If you cant get Elgin sausage, I suspect your favorite smoked sausage will do.

I take a pork tenderloin and remove the silver skin. I put the tenderloin in a zip lock bag and add 2-3 tablespoons of soy sauce, a few tablespoons of water and a few tablespoons of light brown sugar. I get as much air out of the bag as possible and seal it up. Let it marinate in the refrigerator for 1 -2 hours.

It may shock you when you remove the tenderloin. Parts of the tenderloin will be black form the soy sauce, that's alright. rinse the tenderloin. Double up the thin pointy end and tie it with butchers twine. Put pepper and granulated garlic on the tenderloin.

Preheat oven to 350 F. Sear the tenderloin in a fry pan at pretty high heat. put the tenderloin and about 6 sausages on a jelly roll pan with a drain rack on it.

Insert a digital thermometer into the thickest part of the tenderloin. Try to make sure it is in the center. Put the baking sheet with the tenderloin and sausage into the oven. Set the temperature alarm on the digital thermometer to 140 degrees F.

When the alarm goes off, use a brush to baste on the bbq sauce and set the temp alarm for 150 F. When the alarm goes off take the meat out of the oven and put the tenderloin and the sausages in separate aluminum foil pouches to stabilize for 5- 10 minutes.

Slice the tenderloin into 1/4 inch slices and the sausages into 1 1/2 inch sections and serve.

If you want something that resembles true Texas bbq. Serve it with potato salad and pinto beans and if you really want to go over the top, banana pudding with vanilla wafers in it.

Always have some pickle slices, onion slices and some bread without butter and extra bbq sauce. on hand.

Total bake time is about 25 minutes. Folks, you won't believe how good this stuff is.

Setting the temperature to 150 F. gets them just pink. If you want them pinker, feel free to set the temperature a few degrees lower. I only have the bbq sauce on for the last few minutes because I don't like burned sauce at all but you can certainly put the sauce on right from the beginning. It only takes 25 minutes anyway.

If you aren't comfortable with the soy sauce then use a brine with salt, brown sugar and water.
