Pig's Head

I'm sitting here reading "My New Orleans / The Cookbook" by John Besh. I made the Pork Shoulder Rillettes recipe the other day. It's delicious. Now, I'm intrigued by the recipe for Fromage de Tete (Hog's Head Cheese). Any suggestions as to where I might be able to buy a pig's head?

  1. Not seen them there (not that I've looked), but I'd bet Savenor's could either do that or tell you where to look.

    1. Just bought one at Meatland on Centre Street in Jamaica Plain (across from Stop and Shop). 89c per lb.
