Renaissance Sausage - Local, Organic, Food Truck @ Headhouse

This is a great addition to the Headhouse Market - a breakfast and lunch stand that uses the kind of quality ingredients sold by the farmers and ranchers. Rennaisance is the perfect guilty pleasure for anyone who has converted to eating local and organic food but still gets a big craving whenever you walk by a food cart in downtown. Plus, the offerings are so delicious, that people who don't care about ingredient pedigree will still love it.
I had a sausage, egg, and cheese. Now, you might be concerned that they're going to try and "hippie" this dish up by using soy or some crap like that. No way - it's the real thing, lovingly made with stellar ingredients. Sausage patty was incredibly moist, tender, really nicely spiced. Cheese was gooey and delicious, the egg gilded the lily, great bun too. Really, a perfect breakfast. Their country herb sausage covered in caramelized onions also looked fantastic.
They just opened, so they're still working out kinks on timing. The line moved slowly and it took about 15 minutes after ordering my sandwich. Plus, this was on the early side - before 11am, and the first market of the season. They'll have to get the process down as they get more popular, but I'm confident they can pull it off.
Sandwiches are in the $6-$9 range, IIRC. Good price given the quality of ingredients they're using. Nice sized portions - not skimpy at all.
This place is well worth a visit, even if Headhouse isn't in your regular rotation. They will hopefully expand to other markets as their popularity grows. I wish them the best.
