Salmon collars!

I just picked up some beautiful salmon collars from the fish market. I am planning on cooking them tomorrow. Does anyone have any unique suggestions on how to cook them? I would prefer to cook them on the stove top or in the oven. I have had them in Japanese restaurants and LOVED them - looking to recreate something similar.

    Mix some Miso paste with a bit of sugar, sake, and mirin (you can sub a bit of white wine and vinegar). Marinate in that and broil or grill. If you ever get the chance, Hamachi collar (yellowtail) is amazing too.

      Great! I will have to give that a try. I have an amazing Japanese fish market near my house so I'm sure I'll find some Hamachi collars sometime soon :)

      Never tried them! Looked it up and found this.I think my asians market carries them.

          Yay! I'm going to try it too. Did you see the idea about brining and smoking in the comments? I might try that too.
