Milanaise 6 grain flour recipes
Six grains flour is produced with a mix of wheat, rye, corn, barley, oat, and rice grains that are stone-ground.
I love to use this for pancakes/muffins/cakes but have gotten miserable results as its lack of gluten. (newbee baker)
their site does recommend it for the above goods but has only a bread recipe. see below
is there a rule of thumb to add another flour (whole wheat) for making (non yeasted) baked goods to such a low gluten flour. i am mostly interested in basic pancakes/bran muffins/basic choc cake
