Rhubarb Cake Recipe---want to avoid the yellow cake mix.

I have a rhubarb cake recipe (likely from Chowhound, I forgot to record the source) that I want to try. It calls for yellow cake mix batter, and I'd like to "sub" in the real thing.

Does anyone have a good yellow cake recipe that I could use in the following recipe? (It should make enough batter for a 9x13-in. pan. ) Thanks!

"RHUBARB CUSTARD CAKE

1 two-layer yellow cake mix
4 cups chopped rhubarb
1 cup granulated sugar
1 pint whipping cream (2 cups)

Prepare batter for cake mix according to package directions; turn into
greased and floured 9x13” pan. Dump the chopped rhubarb on top of the cake batter. Sprinkle the sugar on top of the rhubarb. Pour the
whipping cream (unwhipped) over the sugar. Bake at 350° for 50-60
minutes, until cake springs back when lightly touched. The cream, sugar, and rhubarb sink to the bottom, forming a custard layer. Best made the night before serving so the custard has time to soak into the cake like a crazily delicious rhubarb tres leches mess."

    Thanks for the replies. I ended up finding a recipe online to substitute for boxed yellow cake mix: http://allrecipes.com/recipe/cake-mixes-from-scratch-and-variations/detail.aspx

    I was pleased with the results, considering how easy it was. I might try adding a little lemon zest next time.

      I also would highly recommend rhubarb fool. Basically rhubarb flavored whipped cream and one of the most wonderful and decadent desserts I know.

          I thought I had seen a recipe that would work for you last night while surfing, but it turns out it was for a rhubarb coffee cake. Then I decided to pass it along just in case...

            I was going to recomend this cake, I made this last summer and it is outstanding! I would highly recomend it and I'm looking forward to rhubarb season!

            Someone on this site pointed me in the direction of the cookbook 'Better then storebought" which I checked out from the library. I want to get a copy as it seems like a valuable resource and I believe it would have a made from scratch yellow cake mix which you are looking for, good luck.

              Thanks for the review of that recipe. I have made a couple of the SmittenKitchen recipes and have been very please with the results.
