Well since I donated my wonderful lunch leftovers to hubby for dinner, I made myself a very nice salad where I emptied the fridge starting with 1/2 can of black beans, then added:
1/2can corn, chopped celery, chopped cukes, chopped roasted r pepper, scallions, 1/2 red onion, lime juice, garlic, fresh basil, cilantro, cumin, string cheese chopped, cayenne, vinegar, oil, s&p.
It was fantastic.

Sunday I made coq au vin in the crockpot so I've been eating the leftovers.
Tonight I'm making this http://www.101cookbooks.com/archives/... which I can eat on Wednesday too, and then I'm not sure about the rest of the week yet.
Possibly something from the new issue of Saveur.

Last night I made some beef/bean/rice filling for tacos throughout the week.
Tonight is fried chicken and baked potatoes, and I'm tossing a couple of extras in the oven.
Since I have the day off, I'm going to make some tomato soup to serve with grilled cheese sandwiches tomorrow after work.
That's as far as I've gotten so far :D -
