I have 1 week old master white bread dough in the frig, would like to put it in a pot ala bitmann recipe. Any advice?

Yes, you can bake it a la Bittman in a dutch oven.

I took a class from one of the authors of the 5 minute a day book. She said that after about a week the bread will not rise as much. Makes better flatbreads then. She said that she often freezes the dough if she isn't going to get to it after a week. Then she unthaws it in the fridge and then bakes as normal. Apparently, the freezing kind of holds the bread at the stage it was at. So you can freeze and thaw and have dough with the character it had when frozen.

Pretty sure they have a post about this on their website, and it's how I do a boule with their master Healthy Bread dough. I preheat the Dutch oven in the oven as I bring it up to temp.

After a week, even in the fridge (unless it was frozen) you may not have much in the way of rise and/or oven spring in the initial and final proof periods but there's no reason why you couldn't use Bitmann's no-knead method for baking your master white bread formula.
