Food For Relay for Life!

Hey everyone! This weekend is Relay for Life at my university. So, I wanted to bring some snacks for the group (not just cookies and chips...we're walking on and off from 6pm-6am, so I thought some nice, homemade snacks might be good). But, they need to be able to sit out for many hours. (Anywhere between 5-12 hours it could potentially be out.) We have limited (very very limited) cooler space. So, any ideas?

    Hummus, black bean dip and veggies or whole-grain crackers...fruit and nuts, maybe a few
    hard-boiled eggs.

      Great to see another Relayer on CH! :o)

      My Relay usually does lunch time fundraisers and then feeds us dinner, but the lunchtime fundraisers will usually last the afternoon and sometime people will start back up around 11 pm. Last year, my team did a beach theme and did hawaiian bbq-style pulled pork sliders and made an absolute killing.

      The one snack thing that I get the most requests for are just simple snack bags of trail mix, dried fruit, and almond clusters that I get at Costco. Did snack bags of cut up veggies as well. Year before last, we had a cold pasta salad that lived in gallon-size ziplocks in the cooler that people would just dump into cups as needed and there were a lot of complaints that we didn't have that last year. Boxes of fruit juice make a nice change from water...
