We use ours all the time. The problem is that we don't cook by recipes. But, we make smoothies of course from time to time, use it to make quick crepe, socca, asian rice pancake batter, all sorts of pureed soup (we did one with raw carrots, which was fun).
One thing I like for a healthy side is to blend cottage cheese, chicken base and sweet potato in there. Not super gourmet, but very smooth and good for you. You can skip the base if you don't use it, and put another seasoning in it.
I make praline paste for desserts in it and homemade nutella.
Whirl a quick pizza sauce, Mexican sauces, salsas.
I grind bean flour for socca and gluten-free baking.
