Do you have any specific area of the Charlotte you're going to be in or prefer to eat in? Its a fairly large, spread out city. Also, do you have any price range? I'd certainly avoid Capitol Grill, as its a rather undistinguished chain. You might want to do a search on here, as there are lots of posts similar to yours. Here are a few:
In Uptown, then Bentley's on 27th, as mentioned downthread, would be a good choice if you want a really high end, high dollar experience for your anniversary dinner. Ratcliffe on the Green and Blue are other suggestions. Other less expensive places for other meals include Coco Osteria (italian, obviously), Press (a wine bar with small plates and good sushi), Ri Ra (an irish pub), Cosmos Cafe, Mert's for soul food, Little Village Grill for falafel pita, The Wooden Vine, new wine bar with outdoor seating right on Tryon Street...great for people watching) and Pie Town for pizza. You can also ride the light rail just a short distance to Nikko for great sushi, Greek Isles, The Liberty (a "gastropub that I don't love, but many others do) and Pewter Rose. You can visit all these without ever getting in your car.
If you want to venture out in your car, Ickymettle has some great suggestions, especially Lulu, Dish, Commonhouse, Penguin, Cabo Fish Taco and Crepe Cellar.

A real nice place for your anniversary dinner would be Bentley's on 27th. It is located on the 27th floor of the Charlotte Plaza Building right Uptown (what we call Downtown)
For a nice romantic dinner in Charlotte, this will impress. There are great views from the floor to ceiling windows, a creative and well-executed menu, and a good cocktail menu. A nice place to splurge for your anniversary.
As for must sees... hang out in Plaza-Midwood Area for fried pickles at The Penguin, veggie burger at dish, and a drink on the deck at Thomas Street Tavern. Then head overf to Common Market for a micro-brew. A block a way is Soul Gastrolounge for small bites and DJ spins, and down the road is Commonhouse and Intermezzo for casual hang out.
