St. Louis style provel cheese.

Anyone know where I could buy St. Louis Provel (not provolone) cheese around Seattle? I've been craving some slingers and prosperity sandwiches.

I just discovered Provel cheese a a great little restaurant in Burien called the Mark Restaurant. I had a amazing pizza and I had to inquire about the type of cheese used and was informed that the St Louis native owner is a huge fan and has it shipped up for her restaurant.
It looks like they offer it on several sandwiches as well. Can't wait to go back.

Is Provel a white cheese? I've not heard of it and it sounds great.

Yes It's a white processed cheese used in St Louis.

I don't know, but Cooks Country magazine recently had a recipe for St. Louis Pizza. It included a way to make a Provel substitute.
