Suggestions for dinner with these ingredients?
Does anyone have any suggestions for how to combine some or all these ingredients into something satisfying for dinner tonight? Vegetarian, please.
Leftover mashed potatoes
I have all the usual pantry staples. Also some tofu, some yogurt, some whole wheat tortillas, some eggs, an avocado and other rather misc stuff.
Something quick and easy would be soooo helpful.
Isn't this a fritter waiting to happen? Shred the zucchini, salt and squeeze dry. Roughly chop the spinach. Mix the vegetables and potatoes together with an egg [or two depending on the number of people you are feeding.] If needed, a few bread crumbs to get the right texture. Add-ins to consider: garlic, scallions, hot sauce, capers, shredded onion.
Form like hamburgers to pan-fry, or drop from spoons for deep frying. If you have some nice lettuce, serve one fritter per leaf.
I see a tasty veggie roast up with mashed potatoes on the side. Toss the zucchini in a garlic/olive oil mixture and roast. Then, do the spinach in a similar mixture on the stovetop. Toss over the potatoes, enjoy.
I would make a frittata with the spinach and zucchini, and warm up the mashed potatoes on the side.
Thanks everybody! I did the fritter idea, shaped in patties / pancakes and pan fried. I only had some shredded mozzarella, so I added a little of that, too, along with some bread crumbs since the mixture was very wet (even after squeezing out the shredded zucchini). Very quick, easy and tasty. Cheers!
