ISO interesting poached eggs

I have developed a recent fetish for poached eggs, and am searching for not only eggs florentine but any interesting, vegetarian takes on poached eggs. Served with potatos, beans, sauce, I don't know, i'm open to anything meat-free. Can anyone tell me anything about the poached eggs at Shopsin's? It appears they offer them in a multitude of ways.

    The brunch menu at Marseille (9th & 44th) has a "poached eggs provencal" served over ratatouille with olives and tomato sauce; it's very good.

        Try cilbir, poached eggs in thick garlic yogurt with Aleppo pepper brown butter. You'll find it at Public and Gulluoglu. Also there's shakshuka and ramen at several places.
