Best Fish Head Curry in Singapore
I'm heading to Singapore for a few days (first stop in a 3-4 month journey through SE Asia) and I am combing the internet for details on where to find the best Indian-style Fish Head Curry.
My brother lives in Singapore and he says that if you want indian style Sammy's is great, but he is suggesting trying Peranakan style at a restaurant called Ivins on Brinjai Pkwy.
Peranakan style seasoning is different - it's more herbal and a more interesting sort of flavour...

Agreed. Nyonya-style spices give their version of fish-head curry a different flavor. Whilst Indian-style fish-head curry tastes of fenugreek, masala spices & cardamom, Nyonya fish-head curry tastes of fresh galangal (blue ginger), lengkuas (lemongrass), kunyit (turmeric) & even belachan (fermented shrimp paste). Both types used tamarind as a souring agent, and a blend of fresh & dried chillis to provide the heat.

The best-tasting fish-head curry I've ever had in Singapore is a Chinese-style one at Ocean Fish-head Curry, 181 Telok Ayer Street, near Amoy St Food Centre in the city. They are open Mon-Sat 9am-6pm, but go there early to beat the large office crowd (before 12 noon). A long, long queue forms at the ordering counter at lunch-time and snaring a seat in the small coffeeshop can be a real pain. But the fish-head curry is absolute bliss!
My favorite was Our Makan Shop but it has closed down. Current favorite is also Ocean Curry Fish Head but located in a different address at Blk 212 Lorong 8 Toa Payoh #01-53 S99 Coffeeshop, so I am not sure if this is the same one as mentioned by Gomez. However, Ocean at Toa Payoh serves a Chinese style assam flavor so there is slight difference compared to the Southern Indian style curry fish head.
