Going down to do a bit of hiking in the Sand Dunes. Driving from Boulder. Anyone know of any great restaurants on the way?

Which way are you going? It's not exactly on the way, but there's a really good little pizza joint in Salida, if you're taking the mountain route. There is only one good restaurant in Alamosa, from what I can tell. It's Calvillo's.

The pizza place in Salida is Amicas-- yum.
Love Calvillo's in Alamosa and am intrigued by the Thai place. I've heard it's pretty good, but have (so far) gone for the known quantity when I'm down there.
There is also a small tortillarilla in Center--warm tortillas, cheese made from Mexican Mennonites, and a wide assortment of dried chiles. I understand there's a restaurant in Center that uses the fresh tortillas, but it's closed on Sundays -- which is when I went -- so I don't know where or how it is. Have heard good things from someone I trust, though.
Oh yeah, if you want to add a swim/soak to your excursion, you could stop at the Sand Dunes pool for a dip/soak and get organic salad/tomatoes/etc at the snack bar--they've got a geothermal heated green house there.
And you can get a really good espresso or chai at the Mirage cafe adjacent to the post office right on 17 in Hooper. http://miragetradingco.com/

The Thai place in Alamosa was wonderful when I was there last spring. And there was a coupon on line for free appetizers, which was a bonus.
We also tried thebrew pub in town which was OK- you didn't die from it but it certainly was not memorable.
