I used to use Fannie Farmer (when I was a kid at my mom's house), now I use Bittman.
Beating the egg whites separately is a good trick for cakes and pancakes alike. If you add blueberries, add a little lemon zest too (not in the book)
Pizza Dough, 2008 edition p 178-9
I made the half whole wheat/half all purpose flour recipe. It was so easy, and I thought it was a really good basic crust. It was a hit with the crowd.
Made the pizza dough and fresh sauce. Dough (half wheat/white as well) was simple and basic, worked fine. Sauce turned out fantastic, though I used fresh tomatoes instead of the canned he recommended and added small amounts of spices.
