Thanks everyone----and thanks Bashful, I did think about making it but you're right, i felt i may be a little short on time---but next time I will. Trader Joe's was my fall-back, turns out i tried the Middle Eastern place at RTM--------people liked it and every last bite was gone, however, I personally did not like the difference in spice than in the traditional Spanikopita----I like TJ's better---oh well, live and learn.

You may not have time for this. I used to make it. It is easy. There is a trick. You need to buy a pound of filo dough, get the recipe, so you would have all the ingredients: spinach, probably chopped frozen style, feta cheese, etc.

Trick is to wrap the filo dough on a damp towel while you are gingerly getting the layers into your dish, laying filling, etc. Otherwise it sticks.

Sorry I don't know where to buy it; I'm sure others will, but next time, try to make it yourself.

There is a pretty good recipe for it in the original Moosewood cook book (how about that as a blast from the past... ). Of coiurse it calls for lots of butter etc. You can substitute olive oil and not be as bad for the arteries...
