Can I make 7-minute frosting in a stand mixer?

edwinasam Mar 18, 2010 04:31 PM

I don't have a hand mixer. I want to make 7-minute frosting, specifically this recipe http://www.epicurious.com/recipes/foo... in my stand mixer.

My idea was to take off on the Cook's Illustrated method for buttercream: whisk the ingredients in the mixer bowl over a double boiler until the temperature comes up to 160, then whisk it on the mixer. It seems like it will work.

Any thoughts?

I can't see why it wouldn't work in a stand mixer. Maybe check it a bit before the stated 6-7 minutes since the stand mixer is more powerful and might get the job done quicker.

sure! that was the very first thing i made in my Cuisinart Stand Mixer, and it worked beautifully. you've got the right idea - bring the ingredients up to temperature and then pour slowly and CAREFULLY into the mixer.
