What do to with a load of cooked, diced potatoes?
Last night I diced up some potatoes and boiled them for mash (with skins on) before remembering that my husband didn't want mash... d'oh!
So I've stowed them in the fridge with a plan to do something tasty with them for dinner today. But I'm completely stuck for imaginative, delicious ideas. Potatoes are great (obvs) but they can also be kinda boring. Can anyone help? I'd be very grateful for your ideas of deliciousness!

next time you can use them to make a potatoe and ham casserole, all u need is diced semi cooked potatoes and diced left over cooked ham or cubed fully cooked ham already packaged, and a small tub of sour cream. just toss it all together, add some seasonings and top with breadcrumbs and bake til the top turns golden and its heated thoroughly. its delicious!

Ooh, I didn't think of that one! Good idea. I haven't made samosas for years. I used to live in Glasgow and there was this corner shop at the bottom of our street that sold the most amazing homemade vegetable samosas for next to nothing. They were so fresh and crispy, with quite a kick of chilli heat and the genius addition of coriander to complement the potatoes and peas. I MISS THEM SO MUCH!

Thanks for all your suggestions guys. I think I'm going to go with BigSal's korokke/croquettes idea (and Cherylptw's idea is similar too!), because we already have some panko (and my husband loves anything in crispy breadcrumbs!)
TheSwedishFish - Yes actually a frittata would usually be our first port of call - great for using up leftovers, but we've had rather a lot of those recently. Thanks for the potato & spinach gratin recipe, it looks delicious and I will definitely be making it soon!
Thanks again everyone. You know when you just can't THINK of anything to make, because your brain just won't work properly even though you know there's loads of cooking knowledge in there.... That's how I felt today and your suggestions have made my tired work-weary Thursday dinner planning much easier!

I like to make a "cake" with potatoes, much like a salmon cake...warm the potatoes in the microwave then partially mash with a fork. Add some caramelized onions, garlic, frozen & thawed peas, an egg and whatever seasonings you like. Form into thick balls then lightly press them into a round shape like a hockey puck. Press them into some panko breadcrumbs then lightly brown in a hot oven proof skillet with a bit of oil. Put the skillet in the oven to finish warming through.
You can make a sauce to serve over the top; I like to do a smoked gouda cheese sauce. This dish is so good!

Potato croquettes. Keep them simple with potatoes, onion and/or cheese and fry with regular bread crums or panko or you can add ground meat. You can find Japanese style croquette recipes by doing a search for korokke (Cooking with Dog on You Tube and about japanesefood.about.com both have recipes). With a Spanish flair- croquetas. Variations are endless.

Also, a few variations on the cake/croquette idea:
Fish cakes (salmon, cod, or tuna, green onions, mustard, mashed potatoes)
Veggie patties (Peas, grated or diced carrots, diced red peppers is a good combo, with mashed potatoes and Indian spices)
"Potato pie" (that's what my husband's family calls it -- mashed potato, lots of cheese, some grated onion, optional breadcrumbs on the outside, pan fry in cast iron if available)

How about making a potato frittata adding other delicious ingredients, or grating them to make rösti, for a Swiss touch? A dish I really like is a spinach, potato and feta gratin, super easy to make. This is not the recipe I've used, but found this to give you an idea:
