HELP !! Need a rub or marinate/rub recipe !! Quick !!

A friend of mine is cooking (2) 20 lb. Round Roasts and was looking for a Rub recipe or a method of adding flavor to it rub/marinate method .. Does anyone have some ideas ??

I usually just use Montreal Steak Seasoning with a little added granulated garlic, onion powder and some cayenne for heat ... just my thoughts.

    1. I would put those bad boys on a rack over a sheet pan in the fridge and cover liberally with kosher salt, for as long as he can. You can also use montreal steak seasoning ( fave of mine) but it will take a while to penetrate a 10 lb hunk of meat. Leave them uncovered in the fridge for as long as possible, coldest part. They will lose some excess moisture but will reabsorb some and be quite juicy, dried enough to sear really well. The kosher salt for a few days will season the meat through, if left one as long as possible.

            1. I did this one Saturday and I was pretty happy with it.

              ½ cup coarse sea salt
              ¼ cup brown sugar
              ¼ cup sweet smoked paprika
              1 tsp dry mustard
              ½ tsp coriander seed, ground
              ½ tsp celery seed
              ¼ tsp cumin seed, ground
              5 allspice berries, ground
              1 pod star anise, ground

              ¼ lb unsalted butter

              1. combine thoroughly in food processor
              2. cover meat with a generous layer and allow to marinate 2 hrs
              3. half-heartedly remove rub and reserve 2 Tbsps.
              4. spray meat with cooking spray and grill
              5. melt butter with reserved rub over medium heat; use this for basting
