To sprinkle on other foods as an accent like for Thai food and ice cream, Also good for baking.

Powdered (dessicated) ingredients have become more common as molecular gastronomy becomes mainstream and ingredients like butter, dried fruits, olive oil, balsamic vinegar and soy sauce have been produced in powder form to add the desired flavor without changing the end product's consistency.

There are a number of baked goods, french macarons come to mind (essentially baked meringue), where liquid or viscous ingredients will destroy the integrity of the batter.

Hungry Girl uses it in all kinds of things. It's got less calories than the regular stuff - only 53 calories for 2 tablespoons. Regular peanut butter has 180-210 depending on the brand.

      2. I found it at Kalustyan's a few months ago, but haven't had time to play with it.

        1. Do you mean PB2? I've tried it, but didn't like it much.
