Does candied ginger go bad?

Green Omnivore Mar 12, 2010 10:43 AM

I just found an unopened bag of Trader Joe's uncrystaliized candied ginger which has an expiry date of April 2009. I opened it up and it smells like ginger, feels like ginger, tastes like ginger. I now have a craving to make ginger snaps! Does dried candied ginger go bad? I didn't think dried goods ever needed an expiry date.

I doubt it's bad. I've made homemade, though, and I've had it mold--too much moisture. If it's bad, you'd definitely know.

What is the difference between crystalized and, as you have, uncrystalized candied ginger?

I may be wrong on this but I think uncrystallized ginger is not as sweet and the ginger is lightly dusted with sugar -- off to make some ginger snaps! :)

Crystallized ginger has sugar crystals on the outside, candied ginger has been cooked in sugar syrup but not to the point of crystallization.

No, it doesn't go bad. The "expiration date" in this case is probably a "we won't guarantee quality after" date.
