Madrid asadors

We're popping over for a couple of nights, specifically to visit the Thyssen.

One night we'll probably eat at the Botin. My partner has visited before and enjoyed eating there. She says she's knows its popular with tourists but, hey, we're tourists.

I'd also like to find a really good asador. Any thoughts (preferably one for which we can make reservations)?
