Need a fun/adventurous/complicated recipe

my date and i have decided to cook dinner together -- and he has asked to actually be involved, and not just wash dishes. my thought is that if we try to make something a little wacky it will be a big enough challenge to put us on equal footing. (i am a comfortable but certainly not gourmet cook, he can microwave)...

so far some kind of funky dumplings or an intense souffle have come to mind, but i am looking for something a little more adventurous. I welcome any and all suggestions!!

      How about handmade ravioli? You can use ravioli wrappers or fresh pasta sheets, if you have a source: http://find.myrecipes.com/recipes/rec...

      I usually "bake" the potatoes in the microwave. And I always add some shallots, fresh rosemary, fresh sage, parsley, and garlic to the filling mixture. Really delicious and fun.
