anytime i think of late night food, 3 words come to mind

David's mai lai wai is excellent chinese in the heart of Chinatown. I believe they are open till 3am, possibly later. It may not be the best in chinatown (to me, toss up with Sang Kee and Lee How Fook), but definitely best place to go when out late night.

not sure how late night you mean, but nick's roast beef at 20th and jackson will not disappoint. they make a good roast pork too....

Not necessarily Chow-ish, but what about the Oregon Diner? I always used to go to the Melrose after shows, but the last time I was there it was NOT good. Apparently there's been a change of ownership. :(
