Kale, Leeks, Chicken, and Sweet Potatoes - What to Make for Dinner?!

I have these ingredients and would like to somehow use them up tonight... Any suggestions for what to do with them all?

  1. Make kale chips as a garnish/app. Bake off the chicken on a bed of sweet potatoes and serve with caramelized leeks on top.

      Ali, that sounds great! But 1.) how do you make kale chips? and 2.) I actually just have two boneless skinless chicken breasts (blah) - not a whole chicken! But I'm loving your idea anyway... Thanks!

        too late now i'll bet, but for kale chips, just tear kale into pieces, spread on a parchment-lined baking sheet, sprinkle with olive oil and seasonings of choice (i just like kosher salt and pepper), and bake for 10-15 minutes at 350 til crispy but not burnt.

        My suggestion would have been to caramelize the leeks with some garlic, then pound the chicken breasts til thin. Line with leeks and kale, along with some goat cheese or feta, then roll up and secure with toothpicks; coat with panko and bake. then with the sweet potatoes, a galette:

Boil, skin and mash the sweet potatoes and combine with some eggs, brown sugar, cream cheese, a hint of sherry (substitute a Chinese Shaoxing, rum, marsala, or any good quality dry white wine) and top with chopped nuts and nutmeg. Bake in moderate oven until lightly browned. Wrap the chicken in the kale leaves and steam. Prepare a leek salad (German dish) using cooked and cooled chopped leeks with a lemon juice or vinegar/sour cream and horseradish dressing.

      1. Perhaps I'm a simple man (though some might say a "simpleton"), but I'm getting much more fond of "less is more." I'm thinking sweet taters get baked and served with high quality EV olive oil, sea salt, and freshly ground black pepper. Leeks and kale are sauteed together and served as a bed for the chicken breasts. The chicken would be either grilled or "pan grilled" after a S&P, red peper, "whatever herb/spice" rub.

          I think you may have the better idea there MGZ. I'm often guilty of giving some of these things too much thought when, lots of the time, simple is better.

            I ended up doing a really simple pasta dish with sauteed kale and chicken, but I got home super late and didn't have the energy for much else.
            I will take these suggestions, however, and definitely use them again.
            Emme - those kale chips sound delicious. I've never thought to do that before.
