I need a block of sushi quality Tuna. I have never bought this before. I know the good shops (ie. Ocean Oddessey, Billingsgate, Fin's). What is my best option?

Your best option for buying quality sushi grade tuna is to firstly do a brief bit of research, learn what sushi/sashimi grade tuna is, then call the fishmongers you mentioned and query them about what they have.
