zuni chicken for a lunch

I would like to prepare Zuni chicken for a lunch in May. There will be about 6 attending. Is there any part of this dish that I can do ahead?

    you have to salt the bird a few days in advance...are you thinking about cooking in advance? It's good leftover, but best out of the oven.
