Stupid easy 3 ingredient chicken
Bone in chicken (I used thighs)
1/2 cup dark brown sugar
1 envelope dry Italian Salad dressing mix
13 x 9 baking dish\
Spray pam on baking dish
Take skin off chicken
Mix brown sugar and salad dressing mix
cover chicken with mixture (use it all)
Bake uncovered for about 50 minutes.

How much chicken is this for? The "recipe" doesn't actually specify how much chicken on which the processed powder is spread. If you're breaking down a whole chicken at home, 2 chicken thighs is what comes off of a normal chicken. However, if you're filling up a 13x9 baking dish, you could feasibly fit 12 thighs into the space. "Recipes" aren't much good without some kind of guidelines in place.
You might want to be careful about putting chicken breasts in a crock pot for 8 hours. You can put a pork shoulder in a crock pot for 8 hours and it will come out tender. As you might imagine, boneless skinless chicken breasts are far more apt to overcook, turn stringy, or even turn to mush (assuming you don't think of them as mush to begin with).
Bone in Chicken + Baking Dish + Seasoning of Choice = Cheap tasty fast dinner - can have endless permutations to personal taste
This is my general method
I buy the thigh/leg packs because they are cheap and I do not prefer white meat anyway. In 13x9 dish I probably get 2 leg/thighs in my 9qt do 4
I keep the skin on because I like it
toss chicken in olive oil and lemon juice
lightly oil casserole dish (can be glass, CI, ECI whatever is handy)
create on a "rack" of sliced potatos and onions (1/2" Rounds) 3 or large potatoes 1 med onion should be enough
Place Chicken on potatoes
sprinkle black pepper, paprika, chili powder (+ whatever spices I feel like adding)
pour a glass of wine or bottle of beer in the bottom of pan
cover in foil and bake - when almost done remove foil and brown skin (under the broiler if it needs it)
remove & serve using juices in the pan as dressing
nice thing about baked bone in chicken is that it is extremely forgiving (especially compared to boneless/skinless) and really neutral so it accepts whatever flavors or ingredients you choose.
