Where has a good tasting menu/ set courses in Dallas?

I'm new to the Dallas area and looking for a nice restaurant to go with my husband for his birthday. Ideally I'd like a place with a nice set courses menu or a tasting menu. Nothing ridiculously expensive but anything to about 75 a person sounds fine. Any cuisine is fine. Where's some favorites of others around here?

This may be a tad expensive for what you are looking for, but Nana at the Hilton Anatole in Dallas has a fabulous tasting menu. It's $85 for 7 courses and $100 for 10. They also do a very good wine pairing.

Abacus has a 4 and 9 course tasting.
Aurora has a petite and a grand tasting menu.
Bijoux has a prix fixe menu.
The mansion has a tasting menu, 95 bucks.

I never got past Lola when it was still open but I've always been curious about Hotel St. Germain.
