I bought it on a whim a week or so ago. I have a more peppery (and pricey!) Tuscan oil that I use for salad dressings and drizzling, but for cooking, I'm using the Irini oil right now. I would definitely describe the flavour as mild and more buttery (meaning not very acidic). It's pleasant, but probably not something I'd use for a salad dressing, since I find the flavour less distinct than some other oils. That might be exactly why you'd like it, though. Give it a try. The price is certainly right.
