various smoked salmons

I was looking at the menu for Russ & Daughters, and am overwhelmed by the number of different kinds of lox and smoked salmon. Does anyone want to give me a quick course in the differences? Thanks!

    It's a matter of taste. We like the gaspe smoked salmon but you can taste all or any of them before you decide.

      Belly lox is the most saltiest...my opinion

      I prefer the silkiness of Nova

        Belly lox is absolutely the saltiest - and one of my favorites! I like stronger flavored salmon in general, not just belly but also Scottish, which (depending on the producer) is one of the smokiest.

        Nova to me is a total waste - all the expense, none of the flavor. But that's just my opinion.

          The gaspe is a type of nova that Russ and Daughters carries...they have quite a few types of nova.

        There is also a hot smoked style, which is more common on the West Coast and Alaska. Some of it borders on jerky.
