Cilantro/Coriander Roots

eight_inch_pestle Feb 26, 2010 04:04 PM

Have a SE Asian recipe calling for a flavor paste that includes minced cilantro root. I thought for sure Uwajimaya will sell some with the roots still attached, but struck out there. Probably should have headed east to Little Saigon, but I was on foot and it was raining pretty good. Anyhow, haven't had any luck any Metropolitan Market or Safeway, either. Any thoughts? Thanks.

when this happens to me, I just use the stems in the spice paste. I see roots far more in summer than this time of year.

Thanks, CTH. It hadn't crossed my mind that it might be a seasonal thing, but that does make sense. I just knew that I had seen the roots way more in Mexican and Asian groceries back east. And good to know the stems are at least a semi-acceptable substitute. This grilled whole striped bass recipe from _Hot, Sour, Salty, Sweet_ has been calling my name for months.

I got them frozen at Mekong Rainier. Haven't tried them yet.

Thanks. I hadn't thought about freezer sections.

Try pounding Cilantro, stems and all, in a mortar with some black peppercorns, and ads it to a Thai curry or stir fry... wow what a flavor and aroma!

Oxbow Farm has Cilantro Root, and they sell at a number of the area Farmer's Markets.
