Frosting without a mixer?
Friend wants a vanilla layer cake with fluffy vanilla frosting for her birthday tomorrow. I'm without my mixer, and my standard buttercream recipe calls for 20 minutes of beating. Does anyone have an alternative that isn't reliant on a mixer? I don't mind a bit of elbow grease as long as it's delicious and fluffy.
Are you using a Swiss or Italian style or a Mousseline buttercream and set on that??
Anyway, classic American buttercream, which is butter, confectioner's suger, flavoring, some sort of liquid, is really the only other style I know of that can be made by hand. They tend not to be quite as fluffy and decadent as a European buttercream, perhaps a bit sweeter, but can be delicious and no mixer. You probably already have a recipe for a classic buttercream. That's the only alternative I can think of, unless you change up the flavor a bit and make a white chocolate ganache, with whipped cream folded in to lighten it. I love European buttercreams but hardly ever make them, simply because 20 minutes with the mixer is a bit much for me.
The mousseline I've made is with a electric hand mixer at stoveside. You could pick up a electric hand model, unless that's what you already have. I have a Cuisinart 7 speed, $56 at amazon,
I don't know if I'd attempt a mousseline with a manual beater, though;-).
