Spicy Green Latin condiment
Does anyone know what the spicy green sauce found at Peruvian and Cuban restaurants is? Does anyone have a recipe for it?

It's probably aji or a modified Cuban mojo with the basic outline of hot peppers, onions/garlic, cilantro, olive oil and citrus.

I have made this sauce several times when I make lomo saltado and white rice. It tastes exactly like the one we are served in a Peruvian restaurant. Ingredients are strange but they do work well.
1 head of iceburg lettuce
1/2 cup mayonnaise
3 fresh jalapeno peppers
1 cup white bread cubes without crusts
You can roast the jalapenos but it is not necessary. I don't
Slam the head of lettuce down on the counter stem side down. Pull on the stem to remove the heart and discard. Rip the head of lettuce apart and put into a blender or large food processor (I find the processor easier.) Add 2 or 3 jalapenos depending on the amount of heat you want. Blend until jalapenos are ground up. Add the mayo and pulse until it is blended in. Gradually blend in the bread cubes until you get a thick but still pourable consistency. It it's too thick, add a little more mayo until you get the pourable consistency. Taste and adjust seasoning to desire.
Put into a squeeze bottle and use.

I would have said chimichurri sauce. Lots of parsley garlic, olive oil. I don't use a particular recipe, just the usual searches. years ago, I really liked the chimichurri from a South American restaurant in Houston called Churrascos, if you want to search on that.
