Where's the best chicken parm sandwich in Waterbury/Oxford area?

A colleague of mine who works in Oxford is a chix parm aficionado and has given up hope that there's one up to snuff, available for lunch, within a 15-20 minute drive.

Surely some old-school red sauce joint in Waterbury knows a proper sandwich, vs. the average lunch spot that serves a pre-frozen cutlet pre-cooked two hours prior to lunch, with some melted cisco cheese and sauce, served on a sponge?

Can anyone help?

    Mattei's in Derby may be pushing the 15-20 minute drive, but they make a nice chicken parm sandwich. They'll do it on a hard roll or a sub - real chicken, nice sauce, generous with the (real) mozz (but you can order it without, I believe). They're on Route 34, the river side, across from Cedric Ave (an antique-type place is kitty corner to them).
