Multiple Dinners in La Quinta - need advice

We are traveling to La Quinta with another couple and I am in charge of dinner options. I need recommendations for a casual restaurant (upscale sports bar?) for first night as we are arriving late, a nice restaurant (not stuffy, but great food and good service) for 2nd night, Mexican restaurant for 3rd night. We are staying at the La Quinta Resort. Any suggestions? THANK YOU!

For a nice, non-stuffy restaurant nearby, try the Cliffhouse. It's got a great view, too.
