Liver & onions?
Butcher Block has a veal liver with marsala, cipollinis and pancetta. I've had it twice and it has been very good both times. While not the classic American preparation, it appears to have the elements you're looking for (liver, cured pork belly, onions).
My only gripe is that you cannot order it to temp (I like calve's liver medium personally, they serve it medium-well).
