In search of picnic shoulder for porchetta
I am looking for a picnic shoulder with the skin on for a porchetta recipe. Does anyone know where I can find one? I haven't seen it either at Androncino's or Safeway. I'm guessing that I can pre-order one from Androncino's, but would prefer to not have to.

The picnic is the shank end of the shoulder, which averages about 5-lbs. I'll second the New May Wah rec, as they will cut to order if you know exactly what you are looking for. Safeway and Lucky's has them on sale from time to time.

Do you know which Safeway and Lucky's carry it? I have noticed that the Safeway and Lucky's different in products sold. The Safeway on Taraval and 17th didn't have it. Would I have to go to one with a butcher?

Sorry, but I do not. I am in Marin and just notice the cut from time to time in their weekly mailers. I always go with the butt end (better for slow cooking), which I can typically get still in the cryovac packaging at Lucky's.

Aside from Thanksgiving-Christmas there seems to be no pattern as to when Safeway has picnic hams. They just appear now and then, and after a week or two are gone. You could try Lucky Pork. I was there today and they did not have picnic hams, but did have whole legs on display. They were skinned, but maybe they have some unskinned ones in the back. They will cut to order if you don't want an entire leg.
