Chocolate Sour Cream Frosting--how far ahead can I make it?

Hello, all. I am making a frosting with chocolate, sour cream and vanilla that I found on an old CH thread (and a similar version in The Fanny Farmer Baking Book). The cake is for Valentine's Day and I'd like to make the frosting on Friday evening or Saturday morning, frosting the cake in the evening and then eating it on Sunday. Friday and Saturday will be busy, so I need to do my cooking in bits and pieces. Can I make this recipe, keep it in the fridge, and then use it on Saturday? Or must I make it shortly before I frost the cake.

    1. It should be totally fine. Just cover well and bring it to spreadable temperature before using and store frosted cake in a cake keeper (or under an inverted bowl) in the fridge.
