Cairo - egyptian cuisine

Hi, could you please help me with egyptian restaurants? Can be any price range and any region of Cairo (we are staying near the Pyramids so we will cab it everywhere anyway).

The only condition is that the food must be really good and hygienic.

From my experience in South America, I didnt particularly enjoy the "rustic" and "home-cooking" dishes, unless they were cooked in real homes with real love, but I really enjoyed all sorts of fine dining, lightened cuisine or fusion.

If you check this board for Cairo restaurants, you will see that I have posted many times about the food in Cairo. Make sure you have Fattir at the Egyptian Pancake House in the Khan a Khalili, koshary is available all over town, and I have posted about one place, GAD is an Egyptian chain where you can get excellent fuul and tamaya along with shwerma and other typical Egyptian food. The one in Mohandeseen on Gamat a Dowel is pretty neat and clean. That's not too far from the Pyramids area and is in a fairly upscale part of town.
