Desire Oyster Bar Cocktail Sauce?
Long time lurker, new member.
I just got back from NO, and loved the cocktail sauce at Desire. I searched the archive, but no luck. Anyone have the recipe?
It definitly has a lot of horseradish, because it will take your breath away for a moment, but is is very tasty.
I usually make my own, and know that if I add too much horseradish it turns the sauce more of an orange color, so i am curious as to what is in theirs to keep the red color while packing the punch.
I have no idea what they do---everyone I know makes his own (It was once said that making oyster "dope" as we used to call it was done with the severity and attention of a Japanese tea ritual). I do know that some of the red remoulades use paprika.
A key is that you must have the freshest possible, i.e. thermonuclear, horseradish.
I had some good ones Super Bowl Sunday and just made a mignonette sauce. They are at the peak of the season right now.
