caul fat

Looking for caul fat in the Northampton/Pioneer Valley area. Any suggestions? River Valley Market doesn't seem to know what it is and Whole Foods scoffs at all things offal.

    Hi Choke,

    I don't know about your area, but Quality Beef in Providence (link below) sells caul fat in 10# lots. Product 30952. Good luck in your search! We should have much more access to caul fat, kidneys, sweetbreads, feet, etc., but those disappeared with real butchers and whole/half carcasses. We live in a strange age of plenty, mediocrity and Cryovac.
