organic restaurants on Capitol Hill

I'll be in DC next weekend, staying at the Washington Court Hotel. I'm looking for a good restaurant for dinner that focuses on using local, organic ingredients. Suggestions?

Haven't been there myself yet, and it may not meet all of your requirements, but Bistro Bis is supposed to be pretty good, and it's plenty close to your hotel:

Nora's is strictly organic, down to how they wash their aprons (which are also organic). It's not on Capitol Hill but not too far away.
