Ideas for using ground beef and potatoes?

joonjoon Feb 7, 2010 08:37 AM

Hello 'hounds!

So today is Super Bowl Sunday...I'm having friends over for the big game, and I would like to make something using potatoes and ground beef (mainly because I have 20lbs of potatoes and about 10 lbs of ground beef).

Any ideas on a delicious party dish that involves these two ingrediants?

Thanks for your replies everyone! We decided to do a loaded baked potato bar with beef chili - it was fantastic!

Add some spices, and pie dough and you can roll out some empanadas.

I agree. Brown the beef, saute onions, carrots and garlic, salt and pepper. Add a little flour, some beer, chicken stock and thyme to make a light sauce. Cook it down a little and then pour into a casserole pan. Top with garlic mashed potatoes (homemade with your regular potatoes)and bake at 350 degrees until the potatoes are browned on top, about 25 mins. This is delicious!!!
