Gilbert to Lake Havasu - good eats along the way?

I'll be taking a road trip in a couple of weeks - a friend of mine wants to see the London Bridge so we're going to daytrip up there. Are there any cool little restaurants that we can check out along the way?

Stop for tamales to go before you leave Phoenix. There isn't really anything along the route, good eats or no. The only towns en route are Quartzsite and Parker, and any reviews I found of restaurants in either town were mixed at best.
